Emilian cuisine, more than a cuisine, is a set of flavors that represents the result of almost eight centuries of comparisons and culinary contributions between the various municipalities, cities and towns of the Region.
It is a solid, tasty and generously seasoned cuisine, always abundant and substantial, a recurring attraction of restaurants and trattorias scattered throughout Italy.
The territory of our Apennines boasts an extraordinary wealth of genuine high quality food products and a great food and wine culture that is used with care and passion in the kitchens of our structures, guaranteeing typical Emilian dishes prepared with traditional recipes handed down for generations.
All in the name of "homemade": lasagne, tagliatelle and the famous ricotta tortellini and tortelloni still made by hand by our expert "sfogline".
The mountain cuisine is in itself very simple and tasty and, in recent years, it has also gradually refined making the most of its local products, once foods of vital importance for the inhabitants of our Apennines, such as chestnuts and mushrooms (precious porcini , cockerels, prignoli, morels…) cooked according to exquisite recipes for appetizers, delicious first and second courses.
The cured meats, some Modenese sausages such as zampone and cotechino, the soft cheeses and the famous Parmigiano-Reggiano all prepared on the spot together with our traditional mountain foods such as crescenti (or from the Fananese "fogaccine" and erroneously called nowadays "tigelle ”), fried pasta (or gnocco fritto) and berlenghi go well with typical Emilian wines such as lambrusco and enrich our exclusive gastronomic variety.
The world famous balsamic vinegar of Modena gives a magical touch to all our dishes. The sweets and liqueurs made with the fruits of our undergrowth (blueberries, strawberries, raspberries, laurel berries and juniper) together with crunchy and sugars, particular sweets in the past reserved only for wedding lunches, satisfy the delight of the most gluttonous palates and refined.
